Jalapeño Pimiento Cheese

8 oz. sharp white cheddar cheese, shredded

8 oz. pepper jack cheese, shredded

2 (4-oz.) jars or 1 (7-oz.) jar diced or sliced Dromedary® pimientos, drained and rinsed

1 jalapeño pepper, seeded and finely minced

1/4 c. mayonnaise

2 T. sour cream

Dash of hot sauce, if desired

Mix all ingredients in a large bowl. Chill if desired. Use as a topping on a variety of crackers, breads, or burgers.
