Healthy Summer Potato Salad

3 cup red-skinned potatoes, cubed
7-oz. jar Dunbars® Roasted Peppers
1 cup sweet red onion, chopped
1 cup celery hearts, chopped
1 cup parsley, finely chopped
1 teaspoon dill
1 teaspoon tarragon
½ cup mayonnaise (fat free)
1 teaspoon lemon juice
Salt and pepper to taste
Boil potatoes in salted water until tender and drain well. Drain Dunbars® roasted peppers thoroughly and chop. In a large bowl, mix all ingredients together and salt and pepper to taste. Refrigerate.
Makes 8 servings
